Thanks to Dear Genevieve, my love affair with living walls has been rekindled. I've written about them before, but couldn't resist sharing some new favorite ideas.

Check out this video to learn about staghorn ferns. Aren't they gorgeous? Antler-like fronds are making plant taxidermy my new favorite decor item.

I'm kinda obsessed with them on these mounts; a nod to preppy while being eco-chic? I'm in.

Virtual Birthday Party

In honor of my sister's birthday today, I'm organizing a virtual birthday party. If money/time/weather were not a factor, this is what I would do to help her celebrate...

I'd greet her in the morning with a batch of homemade pecan sticky buns

Meatless Monday: Veggie Lasagna Roll-ups

There is a large part of me that believes that I'm Italian in heritage- although my parents assure me that I am not. I grew up learning the merits of true tomato sauce and our {large, catholic} family gatherings always had a homemade buffet that read like a trattoria menu.

Perhaps that's why spending a Sunday in the kitchen feels so good to my soul, particularly when I'm laboring on an Italian dish. Vegetarian Lasagna Roll-ups may not be the traditional fare, but they are certainly one of my most cherished culinary inventions. I didn't follow a recipe for this one, I cooked from the heart. So, perhaps I am Italian after all, if only as a state-of-mind?

Recipe for Veggie Lasagna Roll-ups

Ingredients:
2 small eggplants sliced lengthwise
olive oil
12 lasagna noodles
15 oz ricotta cheese
1 package of baby spinach, approx 5 oz
3/4 cup of sliced mushrooms
1/2 cup of diced yellow onion
2 cups of grated mozzarella cheese
1/2 freshly grated parmesan cheese
2 eggs slightly beaten
pinch of ground nutmeg
salt and pepper to taste
tomato sauce {I used Newman's organic tomato basil marinara}

Directions:
1) Lightly oil baking pan and roast eggplants in a 400 degree oven for approximately 30 minutes, turning about halfway through.

2) Saute onion until translucent, add spinach and cook until wilted. Then add mushrooms and saute together until softened. S&P to taste.

3) Add spinach/mushroom/onion saute to 1 1/2 cup of mozzarella, 1/4 cup parmesan, eggs, nutmeg and S&P to taste

4) Cook lasagna noodles according to package instructions, let cool on backing sheets with some oil

5) Start assembling your roll-ups. Spread tomato sauce on the bottom of the pan. Spread cheese mixture onto a noodle, layer with a slice of eggplant and then roll. Add extra sauce on the top of noodles before baking.

6) Bake at 350 degrees for 25 minutes. Add extra mozzarella cheese to the top and then bake for another 20 minutes.

**cooks note- this recipe makes a large batch and can be frozen beautifully.

Mixed Berry Frozen Yogurt

Greek yogurt is a fridge staple in our house, in particular FAGE {I had one taste and I became a yogurt snob, it is just that good}. I use it as a stand in for sour cream, for a quick, healthy breakfast and more often than not I have a batch of tzatziki waiting around.

My newest favorite way to use FAGE is making easy, homemade frozen yogurt. No sugar, just natural sweeteners- its type of treat you can feel good about.

Ingredients:

1 pound frozen mixed berries, thawed and drained

1 tablespoon plus 1/3 cup honey

Two 3-inch-long sprigs fresh thyme

2 cups chilled plain Greek yogurt, I used Fage

1/4 cup agave nectar

2 tablespoons fresh lemon juice

Directions:

Combine 1/4 cup of the berries, 2 tablespoons water, 1 tablespoon honey and the thyme sprigs in a small heavy saucepan. Coarsely mash the blueberries using a fork or a potato masher. Place over medium-high heat and bring to a boil. Remove the pan from the heat, cover and let the mixture stand for 15 minutes. Uncover the pan and let the syrup cool slightly. Discard the thyme sprigs.

Place the remaining blueberries, remaining 1/3 cup honey, yogurt, agave, lemon juice and cooled blueberry syrup in a blender or food processor. Blend until the mixture is almost smooth.

Transfer the yogurt mixture to a glass container with a tight-fitting lid and freeze until firm, at least 8 hours or overnight (the frozen yogurt will still be slightly soft).

Scoop the frozen yogurt into bowls and serve. 1 pound frozen blueberries, thawed and drained

Moving in the right direction

I inherited a cedar chest from my grandmother and wanted to incorporate it into our master bedroom for much needed storage and seating. And while I appreciate pieces with history, the fabric just didn't fit our aesthetic. So this weekend, after a trip to Mary Jo's, I used a yard of fabric to upcycle my family heirloom.

{I also got this great floral fabric which I hope to also incorporate}

And because it is fun to look back and see where we came from to appreciate the progress made, this is a picture from shortly after we moved in.

And this is a similar shot of the room now.

I breath a sigh of relief looking at that second picture. It makes me feel a sense of calm, the precise emotion I hoped to invoke. Some of my favorite details are the pillows made with love by my mother in law, bits of vintage milk glass and favorite jewelry on a bedside table...

And a display of loved ones with my DIY lavender hurricanes.

The bench pulls it all together, don't you think? {p.s. taking pictures of the room was a bit tricky}

I still think there is a way to go in this space. I'd like to add some trim to the curtains, perhaps swap out the lampshades, add a floral pillow, reupholster the vintage chair in the corner and paint an abstract for the far wall. Stay tuned!

Overnight Oats with Vanilla and Cherries

This recipe is the best alarm clock you'll ever set. Before you go to bed, add the ingredients to your slow cooker and then wake up to the smell of warm vanilla perfuming the house. It is a hearty, healthy way to start the day.

Overnight Vanilla Oats with Cherries Recipe:

Ingredients:

4 cups of vanilla-flavored soy milk**

4 cups of water

1 ¾ cups of steel-cut oats (or old fashion rolled oats)

½ cup dried cherries

½ cup of pure maple syrup

½ teaspoon of salt

¼ teaspoon of allspice

Toppings:

Blueberries, chopped pecans or sliced banana

Directions:

1) Lightly grease slow cooker

2) Combine milk, water, oats, cherries, syrup, salt and allspice

3) Cover and cook on low for 8 hours over night (or high for 2-4 hours, depending on the heat of your slow cooker)

4) Add additional water to reach desired thickness if needed, stir and then serve with your choice of toppings

**Note: using soy or almond milk will work better in this recipe than traditional milk because they can stand up to high temperatures and prolonged cooking.

I got hooked on the blog, Haute Indoor Couture, when I saw Elizabeth's apartment tour- I could literally move.right.in. I've become a regular visitor because of her fun demeanor and clear passion for what she does. Oh, and did I mention she is a dog lover? I mean the girl has a room in her home for Henry. LOVE. Her site inspires me to wait for the perfect piece and go for a black/white/natural palate.

Healthy Living

I'm not sure how I didn't know about this sooner, but one of my favorite yoga instructors, Jennifer Decurtins, is also a blogger at Peanut Butter Runner. Jen blogs about fitness, food and life. Just like in class, she manages to challenge and motivate you to be a better you.

Parties and Entertaining:

The team over at Camille Styles is infamous in blogland. But if you haven't checked out their blog lately, it is worth a return visit. Camille has knocked it out of the park lately with her New Years brunch and DIY tutorials. I'm inspired to appreciate the pretty things in life and plan a fun get together with friends.

Foodie:

Angela from Oh She Glows almost had me in tears reading her about me page. Yes, she authors a vegan cooking blog, but her perspective provides so much more. With a tagline like, "glow from the inside out", it's little surprise that I clicked well into her archives. I'm inspired to eat more veggies and harness my own passion for the kitchen.

Photography:

The day I stumbled upon Katie's photography blog, I was blown away. Not only because I adore the way she captures life from behind the lens, but because she is a sorority sister of mine and I had NO idea how talented she is. I love following along as she captures weddings, babies, engagements and life. She inspired me to get clicking.

The best of 2011

Happy New Year, dear readers! I'm filled with hope for 2012 and looking forward to a clean slate that this time of year brings. I recently read the following quote and it stuck with me:

"Love what is ahead by loving what has come before"

In that spirit, I spent some time today reflecting on the year just gone by. It was a humbling exercise that filled me with gratitude and a resolve to make the coming year just as full. Here's my year in review:

In January we took a trip to Charleston, recovered some Craigslist chairs and discovered quinoa.

February was a month of tackling house projects: painting our guest room the perfect shade of green and lavender DIY hurricanes were two of my favorite projects. For Valentines Day, I discovered a new favorite dessert, a chocolate ganache tart with sea salt.

In March, our sweet dog was shaved, he went from fluffy to funny looking. We took another trip to Charleston, discovered heaven on a plate at Poogan's porch and I was schooled in the kitchen by my mom and Aunt Jan.

In April, we were greeted with surprise blooms from a peony plant in our yard, I helped host two baby showers and we started planting our garden.

In May, I fell in love with vintage lighting, ate my weight in heirloom tomatoes and we took a trip to the Blue Ridge Mountains to celebrate my MIL's birthday.

June brought a bounty of cucumbers, chocolate chip cookie dough dip made a regular appearance in our fridge, and I helped host another fun baby shower.

In July we welcomed Kate, our niece, into the world. I started painting everything black, including our front door. And I hosted a greek themed supper club.

In August we spent time with family in Northern Michigan, had a fiesta and enjoyed summer's blooms around the house.

September was low key. I created profiles of our family, did some much needed gardening and made a new vegetarian dish of chipotle roasted vegetables.

In October, I couldn't get enough of all things autumnal. We hosted family, took trips to the farmers market, made slow cooker apple butter and displayed gorgeous dahlias.

November was a month of firsts. I visited New Orleans for the first time, and fell in love. I went to my first oyster roast and learned how to shuck from one of the best. And we hosted Thanksgiving in our new home for the first time.

December closed the year with wonderful memories. Making gifts, spending time with loved ones and celebrating the spirit of the season.

DIY Sugar Scrub

It's not too late to make holiday gifts this year! This easy DIY sugar scrub recipe can be done in a flash and is a great, healthy gift to give this season.

Recipe:
1 cup of organic cane sugar
1/3 cup of organic sea salt
1/2 cup organic coconut oil
2-3 tablespoon almond oil
Lavender essential oil {or your favorite scent}- approx 15 drops

Directions:
Mix all ingredients together and adjust the amount of essential oil and almond oil to your preference of texture. Add to your favorite jar, gift and enjoy the ohhs and ahhs.

Christmas Came Early

It feels like Christmas came early this year:

1) We received the most thoughtful gift yesterday- a true piece of history about our home! Our neighbors keep in touch with the original owners of our house and they gave us an old news article, from 1966, featuring the interior and exterior of our beloved saltbox. I am so touched by her generosity at giving us the news article that she kept for all these years. It makes me fall in love with our home even more. This baby will be going to the framers sometime soon!

2) Our garden is yielding winter vegetables, we have some broccoli and lots of cabbage {which went into our soup last night!}

3) We managed to snap a picture of the two of us, all dressed up, while we were out this weekend. This is such a treat, because we never seem to manage that!

Feeling truly grateful and excited that this week is Christmas.

Limoncello Macaroons

May I make a cookie recommendation? I'd be remiss to not share the cookie that stole the show at our Christmas last year- Limoncello Macaroons. They are like bite-size pillows, full of flavor. Recipe:

1 large egg white

14 oz of almond paste (be sure to buy almond paste not marzipan)

1/2 cup of confectioners sugar plus a generous amount more to dust surface

1/4 teaspoon of almond extract

zest of 1 or 2 lemons (approx 2 teaspoons of zest)

1 tablespoon of limoncello

1/2 teaspoon fine grain sea salt

Directions:

1) Preheat oven to 350 degrees and line cookie sheets with parchment paper

2) Beat almond paste, egg white, confectioners sugar and almond extract together until blended (either by hand or with electric beater)

3) Add zest, limoncello and salt and mix to combine

4) Coat a clean surface with confectioners sugar and turn out dough. Roll into 3/4" thick logs, approx 18" long.

5) Cut into bit-sized pieces, approx 24" per log (see above)

6) Make sure each piece is coated in sugar and then place onto cookie sheet. Because they don't spread much you can crowd the sheet more than normal.

7) Let stand for 30 minutes

8) Bake until golden, approx 15 minutes

Curried Quinoa with Chicken and Peas

Especially at this time of year, {between the hustle and bustle of holiday parties and dinners} when I have time to cook for myself, I like to make simple, healthy dishes. One-pot dinners are in high rotation and this one is a new favorite!

Curried Quinoa with Chicken and Peas

1 T of Olive Oil

1 chicken breast cut into pieces (more if you like)

1 small red onion in a rough chop

1 clove of garlic, crushed and diced

1 15oz can of petite dice tomatoes (I used no salt added kind)

1 T of curry powder

1/2 T of chili powder

1/2 T of nutmeg

2 cups of chicken broth

1 cup of quinoa

12 oz bag of frozen peas

S&P to taste

Directions:

1) Saute chicken, onion and garlic in dutch oven for about 10 minutes or until the chicken pieces are almost cooked

2) Add the tomatoes (undrained) and spices and stir to combine, cook for another 5 minutes

3) Add water and bring to a boil and then stir in the quinoa.

4) Reduce heat to simmer, cover and let cook for 20 minutes

5) With about 5 minutes left, stir in peas and once warmed through serve!

Tory Burch's hostess gift of choice this season are gorgeous blooms from New Zealand called Coral Cham peonies {according to WSJ}. These beauties are in season as it is going into summer down under. While we may not be hosting Ms. Burch over the holidays, what better way to wake up on a Monday morning than admiring some for ourselves?

DIY Magnolia Wreath

I'm going very simple with my Christmas decorations this year. First thing on my list was adding a wreath to our mantle. While I love the look of Magnolia wreaths, I didn't want to spend much, or wait for one to be delivered, so I decided to try my hand at making one. I promise, I'm the last person to tackle a difficult DIY, so I assure you this was easy.

These are the steps I followed:

1) Collect and wash leaves

2) Using a grape leaf wreath form, layer magnolia leaves in co-centric circles until filled. Since patience is not one of my strong suits, I didn't want to bother with the hassle of preserving the leaves. I threw caution to the wind and added fresh cut leaves to a wreath form.

3) A half dozen glue sticks later, I added ribbon and hung her.

All told, I spent about $10 on this DIY and just for fun, here's a comparison.

And since I know you guys like this sort of thing, here's the full room view.

I'll keep you updated on how long she stays green. I'm hoping that even if the color fades, it will end up looking something like this one from Pottery Barn.

Giving Thanks

We feasted yesterday! Some new favorites, some old classics- all of them delicious. I hope you all had a wonderful Thanksgiving too.

We started with a few nibbles, one of which is an all-time favorite appetizer, Crab Salad in Endive Leaves. {Since it's a family recipe and I don't have a link, I've shared the details below!}

And thanks to many helping hands, we set the table with all the fun stuff that I don't get to use on a day-to-day basis. I love pulling out the "fancy" stuff.

N0te to self- if you wait until the Wednesday before Thanksgiving to pick up flowers, the pickin's are slim. Good thing my mom knew how to spruce up the pink roses with rosemary and thyme.

And here's the spread and our bird!

The piece de resistance this year? A pumpkin trifle, yup, I bucked tradition and didn't make a pumpkin pie. And you know what, no one missed it a bit. This guy will be part of my yearly to-do list from now on.

I have so much to give thanks for this year. A loving family, good health, a supportive and perennially lovable husband and my furry son, Major. But I would be remiss to not mention the place this blog holds in my heart. While I may not post as frequently as I would like, the community and comments that you all provide are something I treasure. Thanks for visiting Pink to Green!

Recipe: Crab Salad in Endive Leaves

Ingredients:

1 lemon --- zest and 2 tablespoons juice

1T chopped fresh tarragon

2T chives

2T parsley

1T Dijon mustard

1/2 cup mayonnaise

3/4 cup diced celery

24 Belgian Endive Leaves

Directions:

In a bowl, combine the lemon zest, lemon juice, tarragon, chives, parley, mustard and mayo. Mix well. Stir in the crab and celery and season with salt, ground pepper and cayenne. Cover and put in the fridge for 6 hours {or more}. To serve, spoon the crab mixture into the endive leaves.

This week's highlight reel included:

Attending my first oyster roast was a blast. Wilmington oysters transported fresh to Charlotte, I shucked and slurped my way through at least half a dozen!

Finding a new favorite snack, lime and salt popcorn. Bonus points for being healthy. Eat your heart out!

Crossing #7 of my list of 30 things to do before I'm 30- acupuncture. I'm not sure that one session will have any noticeable results, but it was a good experience, nonetheless. Anyone had success treating migraines with this method?

The Big Easy

Travel can be transformative- particularly when the destination's tag line is, "you're different here". Reflecting on our recent trip to New Orleans, the experience was just that. My first trip to the Big Easy renewed my love of travel; it was the perfect combination of history, food, culture and friends. As we celebrated the wedding our friends Jason and Emily, Nola became a treasured destination.

Beyond Bourbon Street, I was captivated by the city's vibrant, bohemian energy and endless charm.

And the food, lawd, the food was delicious. Thank god Cafe Du Monde isn't anywhere near Charlotte, I would be in trouble.

I managed to have my first po' boy at Acme Oyster House and my first hurricane at Pat O'Brien's all in one day. This is what I learned:

And any trip worth taking, in my book, involves some real estate ogling. A trolley ride over to the Garden District didn't disappoint, my friends. This one was a favorite. I won't lie, I took a picture in front of it. LOVE.

But perhaps my fondest memory of this trip was "second lining" in our friends wedding parade through the streets of the French Quarter. Nothing beats the celebratory feel of a brass band and some beads.

Entertaining Ideas

Hosting a birthday dinner, super club or casual Friday night dinner, come up with a simple theme and it will help you tie all the creative touches in together.

Here I hosted a birthday dinner for 6 people. I wanted to cook an Italian pasta and vua-lah my theme was created! I used a platter I had in my kitchen to tie into the theme, created a fresh yet Tuscan feel center piece, served Italian wines and played Italian tunes!! To change up my dining room table I covered it in brown paper and wrote on it in chalk for the guest’s place cards and the finishing touches of the center piece!

Other fun theme ideas ~

Warm{er} Welcome

If the entryway to your house is like an amuse-bouche, ours needed some sprucing. Over the last few months we've been doing small projects to give our foyer a mini-makeoever. Today, the space is more light-filled, polished and most importantly, personalized.

We added a four-paned, wooden storm door to bring in more light. After looking high and low, we found that the only place that carries this door in Charlotte is Blackhawk Hardware. I'm looking forward to having it open this year for trick-or-treaters!

By far my favorite detail of the space is the newly added pineapple filial. It was a whopping $8 at the Metrolina flea market! It is marble and brass and since I am hoping to have it patina with age, I "un-laquered" the base. There are a few techniques I read about, but dousing it with rubbing alcohol seemed the easiest option, so that's what I did.

I'm still playing around with the styling of the console, but here is what I've got so far. The candle is worth mentioning- it is my friend Meg's Lagniappe scent. I LOVE it and have a few scattered around the house for effect. The scent is unique, sophisticated and inviting; just the type of thing I want to greet my guests.

Speaking of greeting our guests, this guy loves to meet you at the door, can you tell?

Slow Cooker Apple Butter

Making apple butter was almost as enjoyable as tasting the finished product. Slow cooking apples and spices made the entire house smell amazing. I think this recipe really captures the feeling of fall- enjoy!

Approx 14 apples, peeled and quartered (I used a mix of granny smith and a few sweeter varieties from the farmers market)
1 teaspoon of cinnamon
1/2 teaspoon nutmeg
approx 5-7 cloves
1/3 cup of granulated sugar (adapt as needed depending on the sweetness of apples used)
1/3 cup of brown sugar (adapt as needed depending on the sweetness of apples used)
1/2 cup of apple cider

Directions:

Peel and quarter apples, place in the slow cooker and pour in cider. Cook on low for approximately 5 hours. Check on the apples and stir, add spices and sugar and then cook for another 3-5 hours. When the apples have cooked down and turned golden brown, I used an immersion blender to get a smoother consistency. Enjoy!

Boozy Banana Bread

Mornin' blog friends. In the mood for a cozy breakfast? My best suggestion is the following recipe.

Banana bread teamed-up with chocolate chips and bourbon is the perfect antidote to a case of the Monday's.

Ingredients:

3 to 4 ripe bananas, smashed

1/3 cup melted salted butter

3/4 cup brown sugar

1 egg, beaten

1 teaspoon vanilla

1 tablespoon bourbon (optional)

1 teaspoon baking soda

Pinch of salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 1/2 cup of flour

1/2-1 cup of chocolate chips (I used the mini morsels)

Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and bourbon, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add flour, mix. Fold in chocolate chips. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack. Remove from pan and slice to serve.

A {Colonial} Love Story

Critter problems! That's what our local animal control guy called it when he rolled up at our house last Sunday. We've had our share of surprise issues {remember this and this} but this one really pushed me over the edge. I started feeling like I was in a fight with my house and the house was definitely winning {this where you insert my mother saying, welcome to home ownership while I try not to roll my eyes}.

So, I'm writing you today from a proudly "critter" free home, or so we hope. And in an effort to rectify my relationship with this roof over my head, I'd like to tell you the story of how I fell in love with it in the first place and why I continue to love the vision I see for it in the future.

The style of our home is distinctly different than any of the other homes we saw in our search. In fact, it is very different than most homes in our area. While we live in the South, our home was built to be a traditional New England Saltbox style.

Upon moving in, we learned all sorts of things from our neighbors about the original owners.

Hailing from the North East, they wanted to recreate a house that was true to their roots. We've been told that the wife wanted to be historically accurate in her homage to a colonial style home; she chose paint colors to reflect that style and laid brick floors in most of the first floor- they even shipped in the cedar boards for the exterior of the home from Massachusetts.

While many aspects have change on the interior of the home, the bones remain the same. I can't help but feeling a sense of nostalgia as I decorate and garden in this place. Knowing the intention of past owners and the joy this place brought them makes me happy. And while I don't want to live in a literal interpretation of a colonial style home, I do want to try to preserve the original flavor of what they tried to achieve here.

I've recently read this book and would recommend it. I'm trying to become more educated about the colonial style and this was a good place to start.

I've also started collecting images that convey a sense of what I'd like to think of as "Colonial Chic" thanks Lauren. You can see a lot of those on my pinterest boards. Here are some examples:

Katy Elliot's blog is also an inspiration; she is living in a truly historic home in New England and has renovation/decoration stories galore.

So the story continues of a home, dearly loved. I'm there will be more surprises along the way, but this love story is to be continued...

I was happy to stumble across her recent feature in Lucky Magazine where she documented a weeks worth of outfits. As a co-design director for Nate Berkus, her style seems to transcend interiors. She is enviably stylish- I think you'll agree!?

Staycation

A staycation was the perfect way to celebrate our anniversary this past weekend. Being a tourist in my own city was so enjoyable! I wish I had more pictures to tell the story, but all I ended up with on my iphone was this picture.

We enjoyed an incredible meal at a farm-to-fork restaurant called Halcyon. I'm a big fan- I highly recommend. Above, I am taking a sip of my new favorite cocktail, from their menu...

Hello friends! I took a little blog break; I needed recharging. Mat is starting an MBA program, summer is dwindling, there are times to be savored so savoring I did.

And last but not least, I did some baking. I don't know what possessed me to make a funfetti cake, but I'm so glad that I did. We had friends over for game night and shared. I gotta tell you, the best part of the cake was the homemade icing.

Recipe for Strawberry Icing:

1/2 cup of strawberries, fresh or frozen, thawed and pureed

1 cup (2 sticks of butter)

pinch of salt

3 1/2 cups of confectioners sugar

1/2 teaspoon of vanilla extract

Directions:

1) Beat butter and salt together in a stand mixer until light and fluffy (approx 5 minutes)

2) Add vanilla and three tablespoons of pureed strawberries and mix until well blended

We just returned from a week in Northern Michigan with my in-laws, a long-standing family tradition. We celebrated birthdays, anniversaries and babies {3 new to the family this year!}. One of my favorite meals was a fiesta-inspired celebration.

Recipes

Sangria:

- bottle of red wine

Slow-roasted Tomatoes

One of summers greatest pleasures, at least in my book, are vine-ripe tomatoes. Our little garden has been plentiful and I've been having fun adding tomatoes to everything.

Here's a recipe for slow-roasted tomatoes that makes summer's sweet treat even sweeter.

Ingredients:

- Tomatoes {any kind, ripe but not overly so, still firm}

- Garlic

- Olive Oil

- Rosemary

- Salt and pepper

Directions:

Preheat oven to the lowest setting you have {ours was 200 degrees}. Cut tomatoes lengthwise and discard seeds. Slice into desired size, keeping in mind that they will shrink in size significantly. Spread tomatoes on baking sheets with a few whole cloves of garlic, a few sprigs of rosemary, and then toss with olive oil, salt and pepper as desired.

Bake trays of tomatoes in the oven for about 6 hours or until they are a deep red and are chewy.

**note: yes, I am advocating turning your oven on in the middle of summer. yes, I was very skeptical of this myself. however, at it's lowest temperature, the oven didn't seem bothersome or promote a drop on our AC. This cooking method does make the entire house smell incredible!!

Ideas for slow-roasted tomatoes:

- I put mine in a bell jar with the roasted garlic and used for the next week

- add to pastas, salads, pizzas

- in a BLT sandwich, like the recipe I blogged about here

- layer with goats cheese and slices of baguette

Proving that Southern hospitality is alive- and very well, my friends {both from well below the Mason Dixon} hosted a wonderful dinner last night to celebrate Southern cooking.

The idea started with me asking so many questions about the foods they grew up with and boy did they serve up some treats! We dined on everything from fried okra to grits and greens casserole and even johnny cakes. I learned how to really use my cast iron skillet and more importantly, walked away with an immense appreciation for the sweetness of my Southern friends.

Mutual Ground

I'd like to tell you about how proud I am of my sister, Nicole.

Nicole is working to raise awareness and funds for an organization called Mutual Ground which provides services for victims of domestic violence and sexual assault. She asked me to share her story today.

As a survivor of sexual assault, Nicole is taking part in their walk for hope. I've never felt more in awe of her strength and resilience. My sister has shared her story here and I have yet to read it without having tears in my eyes. I tear up because I know the pain that sexual assault can cause a person, family and community and I tear up because I see the powerful impact organizations like Mutual Ground can have on a persons life. I'm humbled to have a sister who is able to share of herself and her struggles to inspire others who may be going through the same hardships.

You may not know me or my sister personally, however, I know that many of us have been touched by either domestic abuse or sexual assault-- either personally or someone they love. The enormity of these topics makes it difficult to put into words how strongly I feel. Therefore, I'll just share with you about Mutual Ground.

Mutual Ground focuses on advocacy and empowerment as they guide victims on a path to becoming survivors. These are services that are priceless, yet are lacking funds. If you're interested in learning more, please visit the following:

A Greek Themed Menu

Last Thursday, for supper club, my friend Laura and I chose a Greek themed menu. Here's what we served:

We laid everything out for the guests to eat in a casual manner; everything can be mixed and matched.
My preference was to pile it all onto a pita like this.

And for dessert, we poured Prosecco over strawberry and mango popsicles. Not necessarily Greek, but delicious and refreshing all the same.

White Bean Dip
Greek Salad

And for the turkey meatballs, I made up the following recipe.
{makes about 50 1" meatballs}

40 oz of lean ground turkey
1 small onion minced
2 cloves of garlic minced
1/4 cup of parsley minced
1/4 cup of sage minced
2 tbsp of bread crumbs
1/2 tsp of paprika
1/2 tsp of chili powder
S&P to taste
2 cups of chicken broth**

Directions:
Pre-heat your oven to 350 degrees. In a large bowl combine the turkey, garlic, parsley, sage, bread crumbs, paprika, chili powder and S&P. Shape into 1" meatballs and then add to a skillet to brown on all sides. Once all meatballs are browned, place into the oven and cook for approximately 20 minutes {or until cooked through}.

**For this occasion, I refrigerated my meatballs overnight. That way, prep was a breeze the next day. I put them in my dutch oven with about 2 cups of chicken broth on low to warm through and then guests served themselves.

I'm so excited to have my friend Whitney, from Blis Boutique, guest posting again today. She has a knack for effortless entertaining {remember her 4th of July ideas here} and today she is talking about one of my all-time favorite things... bubbly!! Enjoy!

Does bubbly have to be so formal?

Right now, my favorite evening beverage is prosecco, sparkling wine or champagne! I list all three because each is very different from one another in there taste, acidity, grape and cost, but not necessarily in their overall presentation! So decide your taste, budget, and have fun with some of these ideas!

Extra fruit on hand ~ try skewers of watermelon or cantaloupe toped with a yummy strawberry

A playful touch of cotton candy does the trick! Just make sure not too touch the bubbly or it will dissolve!

BLAT: Bacon, Lettuce, Avocado and Tomato Sandwish

Sometimes, the easiest dinners are the best. Starting with an abundance of tomatoes, I was prompted to make our favorite version a classic standby-- the BLT sandwich. I do believe the addition of avocado really makes this!

Layer the following:

-Bacon, we used the turkey variety

-Hearty slices of tomato

-Romaine lettuce

-Avocado slices

-Sun dried tomatoes {recipe for a homemade version is coming soon}

-Mayo or veganaise

-S&P

In other news, I was in full-on project mode this weekend. I snapped an in progress picture and can't wait to take an after shot.

Zucchini Bread Whoopie Pies

If you like zucchini bread, this recipe takes it to a whole new level. I think I've opened the floodgates on whoopie pie mania and have been pinning other recipes for future experimentation. Looks like I'm on the way to crossing #6 off my 30 before 30 list!

Recipe from Martha Stewart:

Ingredients

1 cup all-purpose flour
1 1/4 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Coarse salt
1 1/2 sticks unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup finely grated zucchini
1 cup old-fashioned rolled oats
1/2 cup chopped toasted walnuts
8 ounces cream cheese, room temperature
1 cup confectioners' sugar, sifted

Directions

Preheat oven to 350 degrees. Sift flour, cinnamon, baking soda, baking powder, and 1/4 teaspoon salt into a bowl. Beat 1 stick butter and the sugars until pale and fluffy. Beat in egg and vanilla.
Beat flour mixture into butter mixture. Mix in zucchini, oats, and walnuts. Refrigerate until firm, about 1 hour.
Using a 1 1/2-inch ice cream scoop (about 2 tablespoons), drop dough onto parchment-lined baking sheets, spacing about 2 inches apart. Bake until edges are golden, about 17 minutes. Let cool on a wire rack.
Beat together remaining 1/2 stick butter, the cream cheese, and confectioners' sugar until smooth. Spread 1 heaping tablespoon filling onto the flat side of 1 cookie, and sandwich with another cookie. Repeat with
remaining filling and cookies.

Black Door: Before and After

For a couple of hours of effort, I couldn't be happier with the way my latest project turned out. Here's the before and after shot:

I'm loving the results so much that I'm working on the rest of the doors on the first floor; here is another one in progress:

I did a lot of research about black paint before I started this project and ended up choosing to use a high gloss black from Mythic Paint which is a high-performance, eco-friendy paint. Meatless Monday: Mexican Cobb Salad

This salad accompanied me to a BBQ this weekend. Although each layer is uncomplicated, it's a salad that packs a punch. It would easily be dressed up with chicken or shrimp if you don't want to go the meatless route.

I used a layer of the following:

- Romain lettuce

- Mix of 1 can corn, 1 can black beans, chopped cilantro, 1/4 large red onion, juice of 1/2 lime

- Cucumber

-Cherry tomatoes

- Avocado

- Shredded Mexican blend cheese

For the dressing; blend the following in a blender or food processor:

- 1/2 cup lowfat buttermilk

- 1/4 cup light mayo

- 1/4 plain Greek yogurt

- 1/4 cup fresh cilantro

- 1/4 cup fresh parsley (could omit and just do cilantro, but I had some on hand)

- 1 clove of garlic

- juice of 1/2 lime

- 1/4 teaspoon of cumin

- Salt and pepper to taste

YSL Glossy

The humidity here has my hair running for a ponytail, so a bold lip seems like a great way to accessorize {a la Alexis Bledel}. I found the perfect way to achieve the look, YSL's glossy's {particularly #4} are my favorite. They feel like gloss, but pack more of a punch, plus they come in fun, summery colors. Whitney is not only the co-owner of my favorite boutique uptown, Blis, she is also known for her hostess savvy. Whitney has graciously offered to share with us her ideas for 4th of July entertaining and I couldn't be more excited to have her guest blogging today!

This July 4th celebrate your independence from having to come up with new, creative ideas for your table! Here are some of my reuse, produce and recycle ideas for a festive red, white and blue celebration!

Use items you already own- It is exciting to reinvent your everyday items

*example: all white dinner and serving dishes work great for this occasion

Recycle- I love to reuse bottles of any type

*here we used Coke and lemonade bottles as our vases

Grab quick, low cost items at the grocery/Target/dollar store-

*pails that served as napkin and utensil holders

*American flags to complete the patriotic feel

*red, white and blue crate paper to create a latticework tablecloth and decorate glass bottles

Let food be part of the presentation-

*tomatoes and watermelon are in season and also compliment the July 4th color scheme

*use a side, such as pasta salad in glass jars as part of your decor

Meatless Monday: Black bean burger with fiesta slaw

I'm a huge fan of these black bean burgers; store bought, nothing fancy. We dressed ours up for dinner with some fiesta slaw. Not only is the slaw sensationally tasty, but it's SO healthy- no mayo here! Shh... it's vegan in fact. I know some people get scared when they hear that. Give it a try with burgers, tacos, wraps; we made a big bowl and enjoyed it all week long.

White Bean Dip {and a baby shower}

On Saturday I helped host a baby shower for my sweet co-worker Annalisa! Since I usually share new recipes with you on Monday, I couldn't resist sharing some of the goodies we made. From the baby carriage fruit salad to cupcakes everything was delicious.

And if you're looking for an easy and healthy addition to your next hostess menu, I would recommend this white bean dip. We offered it with either crackers and "zucchini or squash" chips which was a fun alternative to a veggie tray.

Summer Essentials

Let's talk makeup- I rarely do, but these products are too good to keep to myself.

1) YSL Touche Eclat 2) Chanel Hydramax Active Teinte 3) Lancome CILS Booster

1)I recently started using YSL's cult classic touche eclat and I have to say, I don't know why I hadn't sooner. It's so much more than a concealer and it really "wakes me up" unlike any other product I've ever used. I'm obsessed and since I can't believe I didn't pony up and purchase it earlier, I'm urging you to try it next time you're at the makeup counter too. I think you'll love it like I do if you don't already! The other two products below are similarly rave-worthy.

2) I'm not a foundation person and have never been able to find a product that really worked for light, non-makeupy feeling coverage while also providing SPF. I have found a miracle for my sensitive skin in Chanel's Hydramax tinted moisturizer. I'm ashamed at the price, but honestly, I've never found a product that is so darn usable and well suited for my routine. My mother always said taking care of your skin is an investment so I consider this product precisely that.

3) I use this lash booster under my mascara and can't tell you how much improved my lashes look. The bonus is that you can use it with literally any cheapo mascara brand you want and you still look like you've used false eyelashes. Extra credit is that is protects your lashes from drying out of you use mascara everyday like I do.

I know I titled this post summer essentials, but really I think I'll use these products year round. What are the go-to's in your makeup bag?

Mediterranean Couscous Salad

This recipe is deceptively simple; don't let the ease of preparation fool you, the bright fresh flavors of lemon, basil and cranberry are anything but boring. Pearl-like Israeli couscous makes this dish, but any type of small pasta is delicious. Make this on a summery day and enjoy each spoonful, I know I do each time I make it.

As part of Stanford University's REAP project {rural education action project} my parents are traveling through China on an adventure of a lifetime. I've been waiting anxiously for tales from their trip; these photos greeted me via email today and I can't get them off my mind:

Why blog?

I'm often asked why I blog. And more often lately, I've been asked by non-bloggers about starting a blog but not sure if they should. Blogging can be misunderstood and challenging to describe but has been such a rewarding experience for me. In a nutshell, this is why I do it; I hope this helps if you're thinking of starting one up too.

Why not?

People say why blog and I say why not? Everyone is unique and has something to share and add with a different point of view. My caveat is that you have to develop and share that unique point of view. Pink to Green is still a work in progress, but I can tell you more often than not, my posts that are unique and personal are my biggest traffic producers. If you would like to share, write and join a community then I say, why not blog. There are so many bloggers out there that if you're interested in something, chances are that there are many others out there too who enjoy the same things. Connect, create, write- why not?

Live your best life

This is my cheesiest point, I promise. Oprah always talks about living your best life and I think blogging in a very real way focuses me to do that. By writing about my life and sharing with others, I've held myself accountable to goals. I've developed my photography skills, learned new recipes, learned an immense amount about design/decor/DIY and garnered very handy computer skills. If you're a perfectionist, sharing your life on the internet can be difficult {which I can relate to} but it also comes with great rewards. I have a wonderful journal to look back on and see what I've done in the past couple years and I love that. In the end, it's your life and your blog, make it your best.

Community

Blogging is joining a community of like minded people. If you engage your readers, create a dialogue and exchange ideas chances are you'll also make a few friends along the way. What's better than that? People may look at you funny the first few times you tell them about your blogger friends, but I promise that it is one of the kindest group of people I've ever been a part of. I have had the pleasure of meeting a few bloggers in "real life" and a long list of people that I feel are like long distance cheer leaders. I can honestly say that comments from readers absolutely make my day!

Keep Creative

My blog is the conduit to my creativity. I'm so grateful to have a place to share creative ideas after a long day working in a non-creative environment. I feel really honored to be connecting with such creative and by-in-large inspiring women. My life is enriched by having a place to challenge my creativity and that's a challenge I look forward to each week. Pink to Green is a fun space for me and I hope that's what your blog is for you too.

Chocolate Chip Cookie Dough Dip

To be fair, my archives are filled with things that I put into this category, but honestly I think this takes the cake, er dough. I made this chocolate chip cookie dough dip for a friend's birthday and I think it was a hit.

A banner weekend in the Blue Ridge Mountains

We're returning home today from a great weekend in Virginia. We stayed in Wintergreen resort and used it as our home base to explore the area {I recommend a trip to the spa if you stay here}!

This is our weekend in pictures:

The view from our balcony was beautiful

We took lots of walks with the dogs

Went wine tasting, Veritas was my favorite

Next time we see these two we'll be celebrating the arrival of their first child- I can't wait to meet my new niece or nephew!

We went zip lining- it was my first time, can you tell I look nervous?!

On Monday we went into Charlottesville.

Be warned, most restaurants are closed on Monday, but we got lucky and enjoyed a great lunch outside at Hamiltons.

Our visit to Monticello was tremendous. The veggie garden was incredible and probably a highlight of my trip!

And we capped the weekend off celebrating my MIL's birthday. We made the yummy pie I blogged about here. It was delicious!

Yup, that's right. I'm taking this show on the road- again. Headed to spend time with my in-laws and to celebrate a very special birthday. Remember how I told you we'd get better at packing together? Well you've got to see this if you haven't already.

It is perhaps the most chic, multi-purpose and usable bag I've ever come across. It's called the O.G {overnight/gym bag} from Lo & Sons and I'm pretty sure that you'll be as blown away as I was by how much you can stuff in there. Just check out this video for proof. I think I need this bag.

In other news, I've been behind on giving thanks. And lately, I've got something to be very thankful about. I hope you'll check out my new gig over on WFAEats blog which is part of Charlotte's local NPR station. I'll be doing a monthly series on learning to cook southern favorites. This month, I'm starting with the basics.

I hope you'll also check out the other notable contributors. I'm particularly smitten with Prerna's blog, Indian Simmer. The pictures and cuisine are incredible!

Speaking of food, if you're looking for something to make this Memorial Day weekend, I'm eyeing this icebox strawberry pie recipe.

It's official, I'm in my late twenties. Today I'm 28, in fact. More than a number, this birthday has some significance to me. Not sure if its a bout of nostalgia or my type-A leanings, but I'm preparing to meet the rest of my twenties with gusto and made a list of the top 30 things I'd like to do before I turn 30. Some are simple, some are not; some are whimsical, some are not. But I love lists and hope that this one will lay the framework for some new adventures. As I pack my bags for the 3rd time this month {I don't know how you road warriors do it, btw} I realized that I really need to conquer my packing-stress once and for all. Many of your shared that you have the same feelings about simplifying your wardrobe/packing routine based on this post. How about we do it together? If there was ever any doubt that I'm a visual person, Pinterest has laid that to rest. I'm not sure if there is a rhyme or reason, I just know that it's fun! "Pinning" with abandon, you'll notice trends evolve on your boards that can give you good insight into your taste/style. Case in point, I've realized that my love for the color turquoise applies to all things upholstered, as well.
